Key Responsibilities
- Skillfully cut, trim, bone, tie, and grind various types of meat (beef, pork, lamb, poultry, and game) according to established standards, customer specifications, and industry best practices.
- Prepare and arrange an attractive, appealing, and well-stocked display of fresh, marinated, and processed meat products, ensuring proper rotation, accurate labeling, and optimal visual presentation.
- Maintain strict adherence to all food safety, hygiene, and sanitation guidelines for all equipment, work areas, storage facilities, and meat products to prevent cross-contamination and ensure product integrity.
- Monitor inventory levels of fresh meat and supplies, accurately record stock, place timely orders with suppliers, and ensure efficient stock management to minimize waste and spoilage.
- Assist customers with their meat selections, offer expert advice on cuts, cooking methods, and preparation tips, and provide consistently excellent and friendly customer service.
- Safely and efficiently operate and perform routine maintenance on all butchery equipment, including meat saws, grinders, slicers, tenderizers, and a range of professional knives.
- Conduct daily deep cleaning and sanitization of the butcher block, display cases, cutting rooms, and all associated work areas to maintain a pristine and hygienic environment.
- Receive and meticulously inspect incoming meat deliveries for quality, freshness, proper temperature, adherence to specifications, and compliance with all health regulations.
- Actively participate in special projects, seasonal promotions, product development, and departmental preparations as required to support business goals.
- Adhere strictly to all company policies and procedures, including health and safety regulations, employee conduct, and operational guidelines.
Required Skills
- Minimum of 3 years of proven experience as a professional Butcher, Meat Cutter, or similar role.
- Exceptional knife skills and comprehensive knowledge of various meat cuts, butchery techniques, and preparation methods.
- Strong understanding and practical application of food safety, HACCP principles, and hygiene regulations.
- Ability to work effectively both independently and collaboratively within a fast-paced, demanding environment.
- Excellent communication, interpersonal, and customer service skills.
- Physical stamina to stand for extended periods, lift heavy objects (up to 25 kg), and work comfortably in refrigerated or varied temperature conditions.
- Meticulous attention to detail and an unwavering commitment to producing and presenting high-quality, consistent products.
Preferred Qualifications
- Formal certification or diploma in Butchery, Meat Cutting, or Culinary Arts from a recognized institution.
- Prior experience in a retail butchery setting with direct, high-volume customer interaction.
- Familiarity with local and international meat standards, trends, and specialty products.
- Proficiency in speaking English and Mauritian Creole.
- Basic computer literacy for inventory management, ordering systems, and record-keeping.
