Job Description

Lupane State University (LSU), a dynamic and growing institution dedicated to academic excellence and community engagement, is seeking a highly skilled and visionary Executive Chef to lead our culinary team. Key Responsibilities

  • Develop and implement innovative, diverse, and culturally appropriate menu cycles for daily dining services, special events, and catering, ensuring variety, nutritional balance, and cost-effectiveness.
  • Oversee all food preparation, cooking, and presentation, ensuring the highest standards of quality, taste, and visual appeal are consistently met across all university dining facilities.
  • Manage kitchen operations, including staff scheduling, inventory control, ordering supplies, and maintaining equipment to ensure efficiency and smooth workflow.
  • Recruit, train, supervise, and mentor a team of chefs, cooks, and kitchen staff, fostering a collaborative and professional work environment and promoting continuous skill development.
  • Establish and enforce strict adherence to food safety, sanitation, and hygiene regulations (HACCP principles), maintaining impeccable standards in all kitchen areas and food service points.
  • Manage food and labor costs, prepare budgets, analyze financial reports, and implement strategies to achieve financial targets without compromising quality.
  • Work closely with university administration, student bodies, and other departments to plan and execute catering for a wide range of events, from small meetings to large-scale university functions.
  • Monitor and evaluate customer feedback, continuously seeking opportunities to improve dining services and adapt menus to evolving preferences and dietary needs (e.g., vegetarian, vegan, gluten-free options).
  • Maintain strong relationships with suppliers, negotiating favorable terms for procurement of high-quality, fresh ingredients.
  • Stay abreast of industry trends, new culinary techniques, and dietary research to continually innovate and enhance the university's food service offerings.
  • Implement sustainable kitchen practices, including waste reduction and energy efficiency initiatives.

Required Skills

  • Proven culinary expertise with a strong portfolio of diverse cooking styles and techniques.

  • Expert knowledge of food safety and sanitation regulations (e.g., HACCP certification).
