Job Description
We are seeking a highly skilled and passionate Fishmonger (Seafood Handling) to join our esteemed culinary team at The Majlis Resort. As our Fishmonger, you will be the cornerstone of our seafood preparation, responsible for the meticulous handling, preparation, and storage of all fish and shellfish. Key Responsibilities
- Receive, inspect, and verify the quality and freshness of all incoming seafood deliveries.
- Perform skilled fish butchery, including scaling, gutting, filleting, deboning, skinning, and portioning of various fish types according to chef specifications.
- Prepare a variety of shellfish, including shucking oysters, cleaning mussels, and preparing prawns/lobsters.
- Ensure proper storage, rotation, and labeling of all seafood to maintain optimal freshness and prevent spoilage, adhering to FIFO principles.
- Maintain immaculate cleanliness and hygiene standards in the seafood preparation area, including all tools, equipment, and surfaces.
- Monitor and manage seafood inventory, assisting with ordering to minimize waste and ensure consistent supply.
- Adhere strictly to all local and international food safety and hygiene regulations (HACCP principles).
- Assist chefs with special requests and contribute to menu development by providing insights on seasonal availability and quality of seafood.
- Properly dispose of fish waste in an environmentally responsible manner.
- Educate kitchen staff on best practices for handling and storing seafood when necessary.
Required Skills
- Minimum of 2 years of proven experience as a Fishmonger, Seafood Processor, or similar role in a culinary setting.
- Exceptional knife skills and precision in seafood butchery.
- Comprehensive knowledge of various fish species, their characteristics, and appropriate handling techniques.
- Solid understanding of food safety and hygiene protocols, with a valid food handler's certificate.
- Ability to work efficiently in a fast-paced kitchen environment.
- Strong attention to detail and a commitment to quality.
- Physical stamina and ability to lift and move heavy items (e.g., ice, fish boxes).
- Excellent communication skills and ability to work effectively within a team.
Preferred Qualifications
- Diploma or certification in Culinary Arts or Food Preparation.
- Experience working in a luxury hotel or resort environment.
- Familiarity with local Kenyan seafood varieties and sustainable sourcing practices.
- Basic computer literacy for inventory management (if applicable).
- Ability to speak both English and Swahili.
