Key Responsibilities
- Perform skilled butchery tasks including cutting, trimming, deboning, grinding, and portioning various types of meat (beef, pork, lamb, poultry, and fish) according to specified standards and customer requests.
- Prepare and display a wide range of fresh and processed meat products attractively and hygienically in the retail counter, ensuring optimal presentation and merchandising.
- Ensure strict adherence to all food safety and hygiene regulations (including HACCP principles) at all times, encompassing proper storage, handling, temperature control, and rotation of all meat products to prevent spoilage and contamination.
- Operate and maintain all butchery equipment safely and efficiently, including band saws, meat grinders, slicers, and various knives, ensuring regular cleaning, sterilization, and sharpening.
- Assist customers with their meat selections, provide expert cooking advice, offer product recommendations, and handle special orders with excellent customer service and a friendly demeanor.
- Manage inventory effectively, which includes receiving, carefully checking the quality and quantity of incoming stock, and implementing proper stock rotation procedures to minimize waste and ensure freshness.
- Monitor and maintain the cleanliness and sanitation of the entire butchery area, including floors, counters, display cases, work surfaces, and all equipment, in line with health and safety standards.
- Contribute to daily production planning, forecasting, and ordering processes to meet anticipated customer demand and accommodate seasonal requirements.
- Adhere strictly to all company policies and procedures related to occupational health and safety, operational efficiency, and quality control.
Required Skills
- Proven experience (minimum 3 years) as a professional Butcher, demonstrating high proficiency in various meat cutting and preparation techniques.
- In-depth knowledge of different meat types, cuts, their characteristics, and optimal preparation methods.
- Strong understanding and strict adherence to food safety, sanitation, and hygiene regulations (e.g., HACCP).
- Ability to safely and efficiently operate and maintain all standard butchery equipment.
- Exceptional knife skills, precision, and meticulous attention to detail.
- Good physical stamina and the ability to lift and move heavy items (up to 25 kg) and stand for extended periods.
- Excellent communication and interpersonal skills with a strong customer service orientation.
- Ability to work effectively in a fast-paced team environment.
Preferred Qualifications
- Formal butchery qualification or certification from a recognized institution.
- Previous experience working in a busy retail or supermarket butchery environment.
- Knowledge of local Mauritian meat preferences, cuts, and culinary traditions.
- Basic computer literacy for inventory management and record-keeping.
- Ability to speak French or Creole in addition to English.
