Key Responsibilities

  • Assist the Executive Chef in all aspects of kitchen management and operations.
  • Oversee and coordinate the daily activities of the kitchen staff, ensuring smooth workflow and high standards.
  • Contribute to menu development, creation of daily specials, and innovation in dish presentation.
  • Ensure strict adherence to food safety, sanitation, and hygiene standards (HACCP).
  • Monitor and manage kitchen inventory, ordering, and stock rotation to minimize waste.
  • Train, mentor, and supervise junior chefs and kitchen assistants, fostering a positive and productive team.
  • Maintain consistent food quality and portion control during service.
  • Manage kitchen equipment maintenance and ensure a clean, organized work environment.
  • Step in for the Executive Chef during their absence, leading the kitchen effectively.

Required Skills

  • Minimum of 4 years of progressive experience in a professional kitchen, with at least 2 years in a Sous Chef or Senior Chef de Partie role.
  • Strong leadership and team management abilities.
  • Exceptional culinary skills with a deep understanding of various cooking techniques and cuisines.
  • Proficiency in food safety and sanitation regulations (HACCP certification preferred).
  • Excellent communication and interpersonal skills.
  • Ability to work effectively under pressure in a fast-paced environment.
  • Demonstrated creativity in menu development and dish presentation.
  • Strong organizational and time management skills.

Preferred Qualifications

  • Culinary degree or diploma from a recognized institution.
  • Experience with Mauritian and international cuisine.
  • Proficiency in inventory management software.
  • First Aid and CPR certification.
  • Fluency in English and French (Creole a plus).
