Job Description
We are seeking a highly motivated and skilled Assistant Chef to join our vibrant culinary team at one of our prestigious hotels in Nairobi. As an Assistant Chef, you will work closely with our Head Chef and senior culinary team to ensure the smooth operation of our kitchen, maintaining the highest standards of food preparation, presentation, and hygiene. Key Responsibilities
- Assist the Head Chef and Sous Chef in the daily preparation and cooking of all menu items, ensuring consistency and quality.
- Execute recipes and production sheets accurately, maintaining portion control and presentation standards for all dishes.
- Oversee proper handling, storage, and inventory of food products to minimize waste and ensure freshness.
- Maintain the highest standards of cleanliness, hygiene, and food safety in the kitchen at all times, adhering to HACCP guidelines.
- Collaborate effectively with kitchen staff, fostering a positive and productive team environment.
- Support the Head Chef in menu planning, development of new dishes, and execution of special events or promotions.
- Monitor and manage kitchen equipment, ensuring proper operation, maintenance, and cleanliness.
- Assist in the training and mentoring of commis chefs and other junior kitchen personnel.
- Ensure compliance with all health and safety regulations, as well as company policies and procedures.
- Contribute to a culture of continuous improvement by providing feedback and suggestions for operational enhancements.
Required Skills
- Minimum of 2 years of proven experience as an Assistant Chef, Demi Chef, or similar role in a reputable hotel or restaurant.
- Solid understanding of various cooking methods, ingredients, equipment, and procedures.
- In-depth knowledge of food safety regulations and hygiene standards (HACCP certification preferred).
- Ability to work efficiently under pressure in a high-volume, fast-paced kitchen environment.
- Strong organizational skills and attention to detail.
- Excellent communication and interpersonal skills, with the ability to work effectively as part of a team.
- Creativity and a genuine passion for culinary arts and creating exceptional dishes.
- Flexibility to work various shifts, including evenings, weekends, and holidays.
Preferred Qualifications
- Diploma or Certificate in Culinary Arts, Hotel Management, or a related field from a recognized institution.
- Experience working in a 4-star or 5-star hotel environment.
- Familiarity with various international cuisines and pastry production.
- Proficiency in basic computer skills for inventory management and recipe systems.
