Job Description

Career.zycto is seeking a skilled and dedicated Butcher to join our client’s dynamic team in Bell Village, Port Louis. Your role will involve a comprehensive range of butchery tasks, from receiving fresh meat deliveries to preparing various cuts for retail display or culinary use. You will be expected to expertly bone, trim, portion, and present a wide variety of meats, including beef, lamb, pork, and poultry, adhering strictly to established specifications and best practices. A strong emphasis will be placed on your ability to minimize waste, manage inventory effectively, and ensure all products are labelled accurately and stored under optimal conditions.

Beyond the technical aspects of butchery, this role also calls for a customer-centric approach. You will interact with customers, offering advice on meat selection, cooking methods, and special requests, thereby enhancing their shopping experience. Key Responsibilities

  • Receive, inspect, and store meat deliveries in accordance with food safety standards.
  • Skillfully cut, trim, bone, and prepare various types of meat (beef, lamb, pork, poultry) into retail-ready portions.
  • Operate and maintain butchery equipment safely and efficiently, including saws, grinders, and slicers.
  • Ensure proper inventory management, including stock rotation, waste reduction, and accurate record-keeping.
  • Maintain high standards of hygiene and cleanliness in the butchery area, equipment, and display cases.
  • Assist customers with meat selection, provide cooking recommendations, and fulfil special orders.
  • Prepare value-added meat products such as sausages, marinades, and pre-packaged meals.
  • Monitor meat quality and freshness, discarding any product that does not meet standards.
  • Adhere to all health and safety regulations, company policies, and food handling procedures.
  • Collaborate with team members to ensure efficient operation and customer satisfaction.

Required Skills

  • Proven experience as a Butcher or Meat Cutter.
  • In-depth knowledge of various meat cuts, preparation techniques, and portion control.
  • Strong understanding of food safety and hygiene regulations (HACCP or similar).
  • Proficiency in operating and maintaining butchery equipment.
  • Excellent knife skills and precision cutting abilities.
  • Ability to work in a fast-paced environment and handle heavy lifting.
  • Customer service orientation and strong communication skills.
  • Attention to detail and commitment to product quality.

Preferred Qualifications

  • Vocational training or certification in Butchery or Meat Processing.
  • Experience with inventory management systems.
  • Knowledge of local and international meat standards.
  • Ability to speak French and Creole in addition to English.
