Key Responsibilities
- Break down primal meat cuts into retail and wholesale portions, ensuring maximum yield and minimal waste.
- Trim, bone, tie, and grind various types of meat (beef, pork, lamb, poultry) according to specified cuts and customer orders.
- Operate and maintain meat processing equipment such as saws, grinders, slicers, and packaging machinery safely and efficiently.
- Adhere strictly to all food safety, hygiene, and sanitation guidelines (HACCP, Kenya Bureau of Standards) at all times.
- Monitor meat quality, freshness, and proper storage temperatures to prevent spoilage and ensure product integrity.
- Package, label, and display meat products attractively and accurately.
- Manage inventory and ensure proper rotation of stock to minimize waste.
- Assist with receiving and inspecting meat deliveries, ensuring adherence to quality and quantity standards.
- Maintain a clean and organized work environment, including regular cleaning of equipment and work surfaces.
- Collaborate with team members to ensure efficient workflow and meet production targets.
- Provide excellent customer service, offering recommendations and answering questions about meat products when necessary.
Required Skills
- Proven experience as a Butcher with a strong understanding of various meat cuts and processing techniques.
- Exceptional knife skills and manual dexterity.
