Job Description
Ilala Lodge is seeking an experienced and passionate Catering Manager to lead our dynamic catering operations. This pivotal role is responsible for overseeing all aspects of our culinary events, from intimate gatherings to grand celebrations, ensuring every experience reflects the unparalleled luxury and service that Ilala Lodge is known for. The Catering Manager will be the driving force behind the planning, execution, and successful delivery of all catering functions, working closely with clients to understand their vision and translating it into extraordinary dining experiences. You will manage a dedicated team of chefs, servers, and support staff, fostering a collaborative and high-performance environment. This role requires a blend of culinary expertise, exceptional organizational skills, and a strong commitment to customer satisfaction. Key Responsibilities
- Plan, organize, and execute all catering events, ensuring seamless delivery from conception to completion.
- Develop creative and diverse menus in collaboration with the Executive Chef, tailored to client preferences and dietary requirements.
- Manage and lead the catering team, including hiring, training, scheduling, and performance management.
- Oversee inventory control, procurement of ingredients, and equipment maintenance, ensuring cost-effectiveness and quality standards.
- Maintain strong client relationships, understanding their needs and ensuring their vision is brought to life.
- Manage catering budgets, forecasts, and financial reports, striving to achieve revenue and profitability targets.
- Ensure compliance with all health, safety, and hygiene regulations.
- Conduct post-event evaluations to identify areas for improvement and implement necessary changes.
- Coordinate with other hotel departments (e.g., Sales, Front Office) to ensure smooth operations.
- Stay updated on catering trends and innovative service techniques to keep Ilala Lodge at the forefront of luxury events.
Required Skills
- Proven experience as a Catering Manager or similar role in a luxury hotel or high-end hospitality environment.
- Exceptional leadership and team management skills.
- Strong culinary knowledge and understanding of food preparation, presentation, and service.
- Excellent communication, negotiation, and interpersonal abilities.
- Proficiency in budget management, cost control, and financial reporting.
- Demonstrated ability to manage multiple projects simultaneously with meticulous attention to detail.
