Job Description

We are seeking a highly motivated and experienced Chef de Partie to join our dynamic culinary team at Career.zycto, located in the charming village of Pentyrch, Cardiff. This is an exciting opportunity for a talented individual with a genuine passion for food and a desire to contribute to a high-standard kitchen operation. As a Chef de Partie, you will play a crucial role in our kitchen, taking ownership of a specific section and ensuring the consistent delivery of high-quality dishes that meet our exacting standards.

Your day-to-day will involve a diverse range of tasks, from precise mise en place and ingredient preparation to executing complex recipes under the guidance of the Head Chef and Sous Chef. We are looking for someone who thrives in a fast-paced environment, can manage their section effectively, and is a natural team player. Key Responsibilities

  • Manage and oversee a specific kitchen section (e.g., larder, hot, pastry) to the highest standards of culinary excellence.
  • Prepare, cook, and present dishes in accordance with recipe specifications, quality standards, and portion control guidelines.
  • Ensure that all dishes are prepared and served to the highest standards of presentation and taste.
  • Monitor and manage stock levels within your section, ensuring proper rotation, storage, and minimal waste.
  • Assist in the development of new menu items and daily specials, contributing creative ideas and expertise.
  • Maintain a clean, organised, and hygienic workstation at all times, adhering strictly to HACCP and food safety regulations.
  • Train and mentor junior kitchen staff, fostering a positive learning environment and upholding kitchen standards.
  • Collaborate effectively with the Head Chef, Sous Chef, and other kitchen staff to ensure smooth service and communication.
  • Conduct daily checks on equipment and report any maintenance issues promptly.
  • Participate in inventory management and ordering processes as required.

Required Skills

  • Proven experience as a Chef de Partie or strong Commis Chef looking for a step up, preferably in a busy restaurant or hotel environment.
  • Strong understanding of culinary techniques, knife skills, and various cooking methods.
  • Excellent knowledge of food hygiene, HACCP, and health and safety regulations.
  • Ability to work efficiently under pressure in a fast-paced kitchen.
  • Exceptional organisational skills and attention to detail.
  • A positive attitude, strong work ethic, and ability to work effectively as part of a team.
  • Flexibility to work evenings, weekends, and holidays as required by the business.

Preferred Qualifications

  • NVQ Level 2 or 3 in Professional Cookery or equivalent culinary qualification.
  • Experience with diverse cuisine styles, particularly British and European contemporary cuisine.
  • First Aid at Work certification.
  • Previous experience in a supervisory or mentoring role within a kitchen.
