Key Responsibilities

  • Prepare and cook high-quality dishes according to client recipes, standards, and specifications.
  • Oversee daily kitchen operations, including mise en place, food preparation, and plating.
  • Ensure strict adherence to food safety, hygiene, and sanitation standards (HACCP principles).
  • Manage inventory, control food costs, and minimize waste without compromising quality.
  • Train and mentor junior kitchen staff, fostering a positive and productive work environment.
  • Collaborate with the Head Chef/Executive Chef on menu development, special promotions, and culinary innovations.
  • Monitor food quality, presentation, and consistency across all shifts and stations.
  • Handle special dietary requests and allergies with utmost care and professionalism.
  • Maintain a clean, organized, and efficient workstation and kitchen area.
  • Assist with ordering and receiving supplies, ensuring proper storage and rotation.

Required Skills

  • Proven experience as a Chef in a reputable hotel or restaurant setting.
  • Exceptional cooking skills with a broad knowledge of various cuisines and cooking techniques.
  • Strong understanding of food safety and sanitation regulations.
  • Ability to work efficiently under pressure in a high-volume environment.
  • Excellent communication and interpersonal skills.
  • Leadership abilities and experience in supervising kitchen staff.
  • Creativity and a passion for culinary arts.
  • Effective time management and organizational skills.

Preferred Qualifications

  • Culinary degree or diploma from a recognized institution.
  • Specialization in a particular cuisine (e.g., fine dining, international, local Kenyan).
  • Experience with advanced culinary equipment and techniques.
  • Fluency in Swahili and English.
  • Certification in Food Safety Management.
