Job Description
We are seeking a highly skilled and dynamic Chef, Kitchen Operations to lead our culinary team at P & M Restaurant. This pivotal role requires an individual with exceptional culinary expertise, strong leadership capabilities, and a deep understanding of efficient kitchen management. As the Chef, Kitchen Operations, you will be instrumental in overseeing all aspects of our kitchen, from menu development and ingredient sourcing to staff training and ensuring the highest standards of food quality and safety. You will be responsible for optimising kitchen workflows, managing inventory, and controlling food costs while maintaining our commitment to authentic Jamaican flavours and innovative culinary approaches. Key Responsibilities
- Lead and supervise all kitchen operations, ensuring adherence to P & M Restaurant's culinary standards and recipes.
- Develop and refine menus, introducing innovative dishes while preserving the authentic essence of Jamaican cuisine.
- Manage inventory, order supplies, and control food costs without compromising on quality.
- Oversee food preparation, cooking, and plating, ensuring consistency, quality, and presentation.
- Train, mentor, and motivate kitchen staff, fostering a collaborative and high-performance team environment.
- Implement and enforce strict health, safety, and sanitation standards in accordance with local regulations.
- Manage kitchen budgets, optimize operational efficiency, and minimize waste.
- Collaborate with the front-of-house team to ensure seamless service delivery and guest satisfaction.
- Stay updated with industry trends and incorporate best practices into kitchen operations.
Required Skills
- Proven experience as a Head Chef, Sous Chef, or similar leadership role in a busy kitchen.
- In-depth knowledge of Jamaican cuisine and culinary techniques.
- Strong leadership, management, and communication skills.
- Exceptional organizational and time management abilities.
- Proficiency in inventory management, food costing, and kitchen budgeting.
- Demonstrated ability to work effectively under pressure and manage multiple priorities.
- Excellent problem-solving skills and attention to detail.
- Food safety and hygiene certification.
Preferred Qualifications
- Culinary degree or equivalent professional certification.
- Experience working with locally sourced ingredients and promoting sustainable practices.
- Bilingual (English and conversational Patois) is a plus.
