Job Description

We are seeking a diligent, meticulous, and dedicated Food Portioning Clerk to join our vibrant culinary team at Pemba Paradise Resort. In this crucial full-time, on-site role, you will play a pivotal part in maintaining the high standards of our food service operations, ensuring consistency, quality, and cost-effectiveness across all our culinary offerings. The Food Portioning Clerk is primarily responsible for accurately measuring, weighing, and packaging food items according to established recipes, precise portion control guidelines, and strict hygiene protocols before they reach our various kitchen stations, buffets, and dining areas. This position demands a keen eye for detail, strong organizational skills, and an unwavering commitment to food safety and sanitation. You will work closely with our talented chefs and experienced kitchen staff to ensure that all ingredients are prepared and portioned precisely, contributing directly to the efficiency of our kitchen workflows and the ultimate satisfaction of our discerning local and international guests. Key Responsibilities

  • Accurately portion and measure ingredients (meats, vegetables, fruits, dry goods, etc.) according to standardized recipes and portion control charts to minimize waste and ensure consistency.
  • Label and store portioned food items correctly, ensuring proper rotation (FIFO) and adherence to all food safety and hygiene regulations.
  • Monitor inventory levels of portioned ingredients and communicate needs to the kitchen management to prevent shortages.
  • Maintain a clean, organized, and sanitary work area, including equipment and storage facilities, at all times.
  • Assist with receiving and inspecting incoming food deliveries, verifying quantities and quality against purchase orders.
  • Operate kitchen equipment such as scales, slicers, and packaging machines safely and efficiently.
  • Collaborate effectively with chefs, cooks, and other kitchen staff to ensure a smooth flow of food preparation.
  • Adhere strictly to all health, safety, and sanitation standards outlined by the resort and local regulations.
  • Contribute to a positive and productive team environment.

Required Skills

  • Proven experience in food handling or kitchen operations, preferably in a hotel or restaurant setting.
  • Strong understanding of food safety and hygiene principles (HACCP knowledge is a plus).
  • Excellent attention to detail and accuracy in measuring and weighing ingredients.
  • Ability to work efficiently and precisely in a fast-paced environment.
  • Good communication and teamwork skills.
  • Physical stamina to stand for extended periods and lift moderate weights.
  • Ability to read and follow standardized recipes and instructions.
  • Basic numeracy and literacy skills.

Preferred Qualifications

  • A certificate or diploma in Culinary Arts, Hospitality, or a related field.
  • Previous experience specifically as a food portioning clerk or similar role.
  • Familiarity with various types of kitchen equipment and portion control tools.
  • Knowledge of different cuts of meat and produce preparation techniques.
  • Fluency in English; knowledge of Swahili is an added advantage.
