The Suffren Hotel & Marina is seeking a dedicated Kitchen Assistant to join our dynamic culinary team in Port Louis. Key Responsibilities
- Execute daily cleaning schedules for all kitchen areas, including floors, walls, and storage spaces, ensuring compliance with local health and safety regulations and internal standards.
- Thoroughly wash, sanitize, and properly store all kitchen utensils, crockery, glassware, cookware, and machinery, using appropriate cleaning agents and operating dishwashing equipment safely.
- Assist chefs with basic food preparation tasks such as washing, peeling, cutting, and chopping vegetables, portioning ingredients, and preparing garnishes as instructed.
- Ensure proper storage and rotation of food supplies and dry goods, adhering strictly to FIFO (First-In, First-Out) principles to minimize waste and maintain freshness and quality.
- Monitor and manage waste disposal, including separating recyclables, organic waste, and general waste, and ensuring waste bins are emptied regularly throughout the day.
- Maintain an organised and clutter-free kitchen environment, ensuring all tools, equipment, and supplies are stored correctly and accessible.
- Receive and put away deliveries, verifying quantities and quality of goods against invoices, and storing them promptly and appropriately in designated areas.
- Adhere strictly to all food safety and hygiene policies and procedures, including maintaining impeccable personal hygiene standards.
- Support the culinary team by fetching ingredients, restocking supplies, cleaning up spills promptly, and assisting with various ad-hoc tasks to ensure smooth kitchen operations.
- Report any hazards, cleanliness issues, equipment malfunctions, or maintenance needs to the Head Chef or Supervisor immediately to ensure a safe working environment.
- Contribute to a positive, collaborative, and cooperative working atmosphere within the kitchen team and with other hotel departments.
