Job Description
We are seeking an exceptionally talented and passionate Pastry Chef to join our dynamic culinary team in Camp Levieux, Rose Hill. This is a unique opportunity for a creative individual with a keen eye for detail and a deep love for the art of pastry and dessert making. As our Pastry Chef, you will be instrumental in elevating Pain d’Or’s dessert offerings, from daily bakery staples to custom-designed creations for special occasions. You will be responsible for the entire pastry section, overseeing the production of a wide range of baked goods, including artisanal breads, viennoiseries, cakes, tarts, mousses, individual desserts, and more. This role requires not only exceptional baking and decorating skills but also strong leadership, organizational abilities, and a commitment to maintaining the highest standards of food safety and hygiene. Key Responsibilities
- Develop and execute a diverse menu of pastries, desserts, cakes, breads, and other baked goods, ensuring consistency and high quality.
- Oversee daily production schedules, ensuring timely preparation and delivery of all items.
- Manage inventory of ingredients, place orders, and maintain cost control without compromising quality.
- Maintain a clean, organized, and sanitary workstation in accordance with food safety standards and regulations.
- Train, mentor, and supervise junior pastry staff, fostering a positive and productive team environment.
- Innovate and create new recipes, techniques, and presentation styles to keep our offerings fresh and exciting.
- Collaborate with the head chef and management on menu planning and special event requirements.
- Monitor and control portion sizes and waste, ensuring efficient use of resources.
- Ensure all equipment is properly maintained and safely operated.
- Adhere to all company policies and procedures regarding food preparation, safety, and hygiene.
Required Skills
- Proven experience as a Pastry Chef or Baker in a professional setting.
- Exceptional knowledge of baking and pastry techniques, including classic and contemporary methods.
- Proficiency in various decoration techniques (e.g., piping, glazing, chocolate work).
- Strong understanding of food safety and sanitation regulations (HACCP principles).
- Creative flair and an ability to innovate with new flavours, textures, and presentations.
- Excellent organizational and time management skills, with the ability to manage multiple priorities.
- Strong leadership and communication skills, capable of training and motivating a team.
- Attention to detail and a commitment to producing high-quality products.
- Ability to work efficiently in a fast-paced, high-pressure environment.
- Physical stamina to stand for long periods and lift heavy objects.
