Job Description

Isiolo Resort is seeking a highly skilled and imaginative Pastry Chef specializing in Cakes & Desserts to elevate our dining experience. This pivotal role involves leading our pastry section, from conceptualizing and developing new dessert menus to meticulously executing a wide array of cakes, pastries, and sweet treats for our restaurant, banquets, and special events. The ideal candidate will possess an impeccable eye for detail, a deep understanding of pastry techniques, and the ability to inspire a team. You will be responsible for ensuring the highest standards of quality, presentation, and food safety, while also managing inventory and controlling costs. Key Responsibilities

  • Design, develop, and execute a diverse menu of high-quality cakes, pastries, desserts, and confectioneries, ensuring creativity and consistency.
  • Oversee all aspects of the pastry kitchen operations, including production, presentation, and quality control.
  • Manage inventory, order supplies, and control costs to maintain profitability without compromising quality.
  • Ensure strict adherence to food safety, sanitation, and hygiene standards in all pastry preparation areas, complying with local and international regulations.
  • Train, mentor, and supervise junior pastry staff, fostering a collaborative and productive kitchen environment that encourages learning and growth.
  • Collaborate with the Executive Chef and culinary team to integrate pastry offerings with overall menu themes and special events, contributing to a cohesive dining experience.
  • Maintain equipment and ensure proper maintenance and cleanliness of the pastry section, promptly reporting any issues.
  • Stay updated on industry trends, new ingredients, and innovative pastry techniques to continuously enhance our offerings and keep our menus fresh and exciting.
  • Contribute to menu planning, costing, and recipe development, ensuring profitability and guest satisfaction.

Required Skills

  • Proven experience as a Pastry Chef or similar role, with a strong portfolio showcasing extensive cake and dessert expertise.
  • Exceptional creativity and artistic flair in pastry decoration and presentation.
  • In-depth knowledge of various baking methods, ingredients, and pastry techniques, including classical and modern approaches.
  • Ability to work efficiently under pressure and manage multiple tasks in a fast-paced, high-volume environment.
  • Strong leadership and team management skills, with the ability to motivate and guide junior staff.
  • Excellent communication and organizational abilities, capable of clear instruction and efficient workflow management.
  • Understanding of food cost control and inventory management best practices.
  • Commitment to maintaining high standards of hygiene and food safety.
  • Problem-solving skills and adaptability to changing needs and preferences.

Preferred Qualifications

  • Diploma or degree in Culinary Arts, Pastry Arts, or a related field from a recognized institution.
  • Experience working in a hotel or upscale restaurant setting with a strong emphasis on dessert programs.
  • Proficiency in creating custom cakes for weddings, birthdays, and other special occasions.
  • Knowledge of local Kenyan dessert traditions and ingredients, with an ability to incorporate them creatively.
  • HACCP certification or equivalent food safety training and a deep understanding of kitchen safety protocols.
