Job Description
We are seeking a highly motivated and experienced Sous Chef to join a dynamic culinary team in a renowned establishment in Brentry, Bristol. As Sous Chef, you will work closely with the Head Chef, acting as their right-hand person, to ensure the seamless execution of daily kitchen activities, maintaining the highest standards of food quality, presentation, and hygiene. Your primary focus will be on providing robust kitchen support, encompassing everything from precise inventory management and ordering to ensuring all mise en place is meticulously prepared and organised. Key Responsibilities
- Assist the Head Chef in all aspects of kitchen management and operations.
- Oversee and participate in the daily preparation and cooking of all menu items.
- Ensure strict adherence to recipes, portion sizes, and presentation standards.
- Manage kitchen inventory, stock rotation, and ordering to minimise waste and maintain optimal supplies.
- Supervise, train, and mentor junior kitchen staff, fostering a positive and productive work environment.
- Maintain immaculate standards of kitchen hygiene, cleanliness, and food safety in line with EHO regulations.
- Contribute to menu development, creation of daily specials, and costing exercises.
- Monitor food quality, consistency, and presentation, implementing corrective actions as needed.
- Operate and maintain kitchen equipment safely and efficiently.
- Handle kitchen administration duties, including scheduling and record-keeping, in the Head Chef's absence.
- Ensure compliance with all health and safety regulations, including COSHH.
Required Skills
- Proven experience as a Sous Chef or Senior Chef de Partie in a high-volume restaurant or hotel kitchen.
- Strong culinary skills across various sections (hot, cold, pastry).
- Excellent leadership and team management abilities.
- Deep understanding of food safety and hygiene standards (HACCP, EHO).
- Ability to work effectively under pressure in a fast-paced environment.
- Strong communication and interpersonal skills.
- Creativity and passion for food and menu development.
- Organisational and time management capabilities.
Preferred Qualifications
- NVQ Level 3 in Professional Cookery or equivalent qualification.
- Experience with diverse international cuisines.
