Job Description

Mateanong Eco-Tourism Lodge is seeking dedicated and enthusiastic Kitchen Staff to join our vibrant culinary team in Lebakeng. As Kitchen Staff, you will play a vital role in supporting our Head Chef and ensuring the smooth operation of our kitchen. Your day-to-day will involve assisting with meal preparation, from the meticulous cleaning and cutting of fresh, local produce to the careful plating of traditional and contemporary dishes. You will be instrumental in maintaining a pristine and organised workspace, managing inventory to minimise waste, and contributing to a positive, efficient atmosphere for both staff and guests. Key Responsibilities
- Assist the Head Chef with daily meal preparation, including chopping, peeling, washing, and general mise en place for breakfast, lunch, and dinner services.
- Ensure all food preparation areas, utensils, and equipment are maintained to the highest standards of cleanliness and hygiene in accordance with health and safety regulations.
- Monitor and manage kitchen inventory, assist with stock rotation, and report any shortages or damaged items promptly to ensure efficient kitchen operations.
- Receive and store deliveries efficiently and safely, ensuring proper labelling and organization of all ingredients and supplies.
- Operate basic kitchen equipment safely and effectively, following all operational guidelines and safety protocols.
- Contribute to menu development by suggesting ideas for local dishes and seasonal ingredients, embracing the lodge's eco-tourism ethos.
- Adhere strictly to all food safety guidelines, including precise temperature control, prevention of cross-contamination, and proper waste management procedures.
- Collaborate effectively with other kitchen and lodge staff to ensure a seamless and enjoyable dining experience for all guests.
- Assist with washing dishes, pots, and pans, and maintaining a tidy and organised wash-up area throughout service hours.
- Support special events or guest requests as needed, demonstrating flexibility, initiative, and a consistently positive, can-do attitude.

- Prior experience (6+ months) working in a kitchen or food service environment.
- Basic culinary training or certification from a recognised institution.
- Knowledge of traditional Basotho cuisine and experience working with local ingredients.
- Ability to speak Sesotho and English fluently to effectively communicate with staff and guests.
- A passion for sustainable practices, community engagement, and eco-tourism principles.
