Key Responsibilities

  • Supervise and coordinate daily catering operations, ensuring smooth service delivery from kitchen to dining areas.
  • Train, mentor, and motivate catering staff, including chefs, cooks, and servers, to maintain high performance standards.
  • Oversee inventory management, including ordering, receiving, and proper storage of food and beverage supplies.
  • Ensure strict adherence to all food safety, hygiene, and sanitation regulations (HACCP principles).
  • Assist in menu planning, development, and costing, incorporating local ingredients and guest preferences.
  • Monitor food quality and presentation, ensuring all dishes meet the lodge’s high standards.
  • Manage guest complaints and feedback effectively, ensuring prompt resolution and guest satisfaction.
  • Schedule staff shifts and manage labor costs efficiently to meet operational needs.
  • Conduct regular inspections of kitchens and dining areas to ensure cleanliness and operational readiness.
  • Collaborate with other lodge departments to ensure seamless guest experiences and operational efficiency.

Required Skills

  • Minimum of 2 years of proven experience in a supervisory role within catering, hotel, or restaurant operations.
  • Strong knowledge of food preparation, cooking techniques, and kitchen management.
  • Excellent leadership, communication, and interpersonal skills.
  • Demonstrated ability to manage a team effectively and foster a positive work environment.
  • Proficiency in inventory control, cost management, and waste reduction techniques.
  • Thorough understanding of food safety and hygiene regulations (e.g., HACCP).
  • Ability to work flexible hours, including weekends and holidays, as per lodge requirements.
  • Problem-solving skills and ability to perform under pressure.
  • Fluent in English (both written and spoken); knowledge of Sesotho is an advantage.

Preferred Qualifications

  • Diploma or degree in Culinary Arts, Hospitality Management, or a related field.
  • Experience working in a remote lodge or national park environment.
  • Certification in food safety and hygiene.
  • Experience with diverse international cuisine.
  • First Aid certification.
