Job Description

We are seeking a highly passionate and skilled Chef – Culinary Artisan to join our dynamic kitchen team at Veranda Tamarin Hotel & Spa. This pivotal role requires a creative culinary professional who is adept at crafting exceptional dishes, managing kitchen operations, and inspiring a team. You will be instrumental in maintaining our high standards of food quality, presentation, and hygiene, contributing significantly to our guest satisfaction. The ideal candidate will possess a profound understanding of diverse culinary techniques, a flair for innovation, and a commitment to utilizing the finest local and seasonal ingredients. You will be responsible for a section of the kitchen, supervising junior staff, and ensuring smooth service delivery from preparation to plate.

Key Responsibilities

  • Prepare and cook a variety of high-quality dishes according to the hotel's recipes and standards, ensuring consistency and excellence.
  • Oversee and manage a specific kitchen section (e.g., hot kitchen, cold kitchen, pastry), ensuring efficient operation and adherence to culinary guidelines.
  • Train, mentor, and supervise junior chefs and kitchen staff, fostering a positive and productive work environment.
  • Collaborate with the Head Chef and Executive Chef on menu development, incorporating seasonal ingredients and innovative culinary trends.
  • Ensure strict adherence to all food safety, hygiene, and sanitation standards as per HACCP principles and local regulations.
  • Manage inventory for your section, minimize waste, and assist with ordering supplies as needed.
  • Monitor food quality, portion control, and presentation before dishes are served to guests.
  • Maintain a clean and organized work station, ensuring all equipment is properly cleaned and maintained.

Required Skills

  • Proven culinary expertise with at least 4 years of experience in a reputable hotel or restaurant.
  • Strong leadership and team management abilities.
  • Exceptional creativity and a passion for food innovation.
  • Excellent knowledge of diverse cooking techniques and international cuisines.
  • Proficiency in food safety and sanitation regulations (HACCP certification preferred).
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Strong communication and interpersonal skills.
  • Attention to detail in food preparation, presentation, and quality control.

Preferred Qualifications

  • Culinary degree or diploma from a recognized institution.
  • Experience in a resort or hotel environment with multiple F&B outlets.
  • Specialization in Mauritian, French, or Asian cuisine.
  • Fluency in English and French; Creole is a plus.
