Job Description

Montclair Hotel & Casino is seeking an enthusiastic and skilled Chef de Partie to join our dynamic culinary team. As a Chef de Partie, you will play a crucial role in the daily operation of our busy kitchens, contributing to the preparation and execution of high-quality dishes across various sections. You will work closely with the Head Chef and Sous Chef, taking ownership of your station, mentoring junior staff, and maintaining a positive and efficient working atmosphere. Key Responsibilities

  • Manage and oversee a specific kitchen section (e.g., Larder, Sauté, Grill, Pastry) ensuring efficient operation and consistent output.
  • Prepare, cook, and present dishes according to company recipes, standards, and guest dietary requirements.
  • Ensure all food is prepared to the highest standards of quality, taste, and presentation.
  • Monitor and maintain high standards of cleanliness, hygiene, and organization in the kitchen section, adhering to HACCP guidelines.
  • Assist in the training and supervision of Commis Chefs and other junior kitchen staff.
  • Manage inventory for your section, minimize waste, and assist with ordering supplies.
  • Contribute to menu development and innovation, suggesting new dishes or improvements.
  • Ensure compliance with all health and safety regulations.
  • Collaborate effectively with other kitchen staff and front-of-house teams to ensure smooth service.
  • Perform other duties as assigned by the Head Chef or Sous Chef.

Required Skills

  • Proven experience as a Chef de Partie or strong experience as a Commis Chef in a reputable establishment.
  • Solid understanding of various cooking methods, ingredients, equipment, and procedures.
  • Excellent culinary skills with a passion for food quality and presentation.
  • Ability to work efficiently under pressure in a fast-paced kitchen environment.
  • Strong organizational and time management skills.
  • Knowledge of health, safety, and hygiene regulations (HACCP).
  • Effective communication and teamwork abilities.
  • Ability to work flexible hours, including evenings, weekends, and holidays.

Preferred Qualifications

  • Culinary degree or diploma from a recognized institution.
  • Experience working in a 4 or 5-star hotel environment.
  • Familiarity with local Zimbabwean cuisine and international dishes.
  • Ability to mentor and motivate junior kitchen staff.
