Key Responsibilities
- Oversee and manage daily kitchen operations, ensuring seamless and efficient workflow across all stations.
- Supervise, train, and mentor kitchen staff, fostering a positive, productive, and cohesive team environment.
- Assist in comprehensive menu planning, development, and costing, actively introducing innovative and appealing dishes that reflect both local and international culinary trends.
- Ensure strict adherence to all food safety, sanitation, and hygiene standards, including HACCP principles, to guarantee guest and staff well-being.
- Monitor inventory levels, manage food orders, and implement strategies to minimize waste and optimize ingredient usage.
- Maintain consistently high standards of food quality, presentation, and taste for all dishes prepared.
- Manage kitchen budgets effectively, optimizing resource allocation and controlling labor and food costs.
- Collaborate closely with the Head Chef to implement new culinary initiatives, special promotions, and seasonal menus.
- Handle guest feedback and address any culinary concerns promptly, professionally, and to their utmost satisfaction.
- Ensure all kitchen equipment is regularly maintained, clean, and operated safely by all staff.
- Contribute to the development and implementation of sustainable kitchen practices.
Required Skills
- Minimum of 4 years of proven experience in kitchen management and culinary leadership, preferably in a hotel or high-volume restaurant.
- Extensive knowledge of various cooking methods, ingredients, kitchen equipment, and culinary best practices.
- Strong understanding and practical application of food safety and hygiene regulations (HACCP).
- Excellent leadership, communication, and interpersonal skills, with the ability to motivate and manage a diverse team.
- Ability to work efficiently under pressure in a fast-paced, demanding kitchen environment.
- Demonstrated creativity and innovation in menu development and food presentation.
- Proficiency in English and Kinyarwanda; French is an added advantage.
Preferred Qualifications
- Culinary degree or equivalent professional certification from a recognized institution.
- Experience specifically within a 3-4 star hotel setting.
- In-depth knowledge of local Rwandan cuisine and a broad understanding of international culinary trends.
- Proficiency in basic computer applications, including MS Office and inventory management software.
- Advanced certification in food safety or kitchen management.
