Key Responsibilities

  • Develop, create, and present a diverse menu of high-quality pastries, desserts, and baked goods.
  • Ensure all dessert items meet the highest standards of taste, presentation, and quality consistently.
  • Manage the daily operations of the pastry section, including preparation, cooking, and plating.
  • Oversee inventory control for all pastry ingredients, ensuring optimal stock levels, freshness, and minimal waste.
  • Place orders for supplies, ensuring fresh and high-quality ingredients are always available.
  • Maintain a clean, organised, and sanitary workstation in accordance with all health and safety regulations.
  • Train and mentor junior kitchen staff in pastry techniques and best practices, promoting skill development.
  • Collaborate with the Head Chef to integrate dessert offerings harmoniously with the overall restaurant menu.
  • Innovate and introduce new dessert concepts, keeping up with industry trends and guest preferences, especially using local ingredients.
  • Adhere strictly to all food safety and hygiene standards (HACCP principles).

Required Skills

  • Proven experience (minimum 3 years) as a Pastry Chef or Baker in a reputable restaurant, hotel, or bakery.
  • Exceptional knowledge of pastry arts, baking techniques, and intricate dessert presentation.
  • Demonstrated creativity and artistic flair in developing new and unique dessert recipes.
  • Strong understanding of food safety and sanitation regulations (HACCP principles).
  • Excellent organisational and time management skills, with the ability to manage multiple tasks.
  • Ability to work efficiently and calmly under pressure in a fast-paced kitchen environment.
  • Strong communication and teamwork abilities, fostering a positive working relationship with colleagues.
  • Meticulous attention to detail and unwavering commitment to consistency and quality in all creations.

Preferred Qualifications

  • Culinary degree or relevant professional certification in Pastry Arts.
  • Experience working with local Mauritian ingredients, flavours, and traditional recipes.
  • Fluency in English and French (knowledge of Mauritian Creole is a significant advantage).
  • Previous experience in a supervisory or leadership role within a pastry department.
