Key Responsibilities
- Develop and prepare high-quality, innovative dishes across various culinary sections (e.g., hot kitchen, cold kitchen, pastry).
- Oversee and manage daily kitchen operations, ensuring efficiency, consistency, and adherence to recipes and standards.
- Collaborate with the Head Chef and F&B Manager on menu development, costing, and special event planning.
- Maintain strict compliance with all food safety, sanitation, and hygiene regulations (HACCP principles).
- Monitor inventory, manage stock rotation, and minimize waste to control food costs effectively.
- Train, mentor, and supervise junior kitchen staff, fostering a positive and productive working environment.
- Ensure all food preparation and presentation meets The Boma Nairobi's exacting standards for taste, quality, and appearance.
- Manage kitchen equipment maintenance and ensure a clean and organized workspace at all times.
